Observed no employee handwashing sign in sushi bar. Provide employee hand washing sign at hand sink in sushi bar before the next routine inspection. Repeat
16 P 4-501.114 (A):  (A) A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under ¶4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA- registered label use instructions, and shall be used as follows: (A) A chlorine solution shall have a minimum temperature based on the concentration and pH of the solution as listed in the following chart in the Food Code.

Observed cutting board has a lot of knife grooves in it. Replace this cutting board within 10 days. - Repeat (Correct By: Sep 29, 2023)
49 C 4-601.11(C): (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of dust, dirt, FOOD residue, and other debris.
1. Observed bottom of prep tables have food debris on them. Clean and maintain before the next routine inspection. 2. Fryers have grease and debris in them. 51 P 5-202.13: An air gap between the water supply inlet and the flood level rim of the PLUMBING FIXTURE, EQUIPMENT, or nonFOOD EQUIPMENT shall be at least twice the diameter of the water supply inlet and may not be less than 25 mm (1 inch).
Observed plumbing was in floor drain under hand sink. Cut pipe 1 inch above floor drain. Will check on Monday to see that this have been fixed. - (Correct By: Sep 22, 2023)
